step 1- First of all, remove the thick stalks of spinach, clean it and wash it thoroughly. Now put the spinach in a cooker and add salt, break 5-6 cashew nuts and 2 green chillies on top. Switch off the cooker and whistle on medium flame.
Step 2- Now immediately put 5-6 ice cubes in the spinach leaves, this will keep the color green. If you want, you can also add half a spoon of sugar while boiling spinach. Due to this the color of the leaves will remain completely green. You can also open the spinach and boil it in a vessel.
Step 3- After it cools down, put the spinach in a mixer and grind it and make a puree. You can keep it thick or thin as per your choice. You can also grind it a little coarsely as required for making saag.
Step 4- Now heat mustard oil in a pan and add some cumin and asafoetida in it. Grind 1 finely chopped onion and 8-10 cloves of garlic and 1 inch ginger into oil and add it to make a paste. When all the ingredients are lightly roasted, add puree of 1 big tomato to it. Cook the spices till they release oil.
Step 5- Add 1 pinch of turmeric, salt and coriander powder on top and stir while mixing. Now add prepared spinach puree to it and cook on high flame for about 5 minutes. Cut the paneer into cubes and fry in 1 spoon oil until it becomes light golden.
Step 6- After the gravy starts boiling, add fried paneer cubes to it and mix well. Now add some Kasuri Methi on top and make tadka for Palak Paneer. For this, take 2-3 spoons of desi ghee in a ladle and add 4 finely chopped garlic cloves, 2 whole red chillies and half a spoon of Kashmiri chilli. Pour this tempering on top while serving.
