Aloo Capsicum Sabji Recipe: A very easy recipe to make Aloo Capsicum Sabji Recipe

Aloo Capsicum Sabji Recipe: Everyone wants to make such a vegetable in lunch or dinner which is very tasty to eat. A vegetable made from potatoes and capsicum is a perfect recipe for this. Potato-capsicum vegetable is also very popular among children due to its rich taste. This vegetable is also in great demand in hotels and restaurants. Potato-capsicum curry is very easy to prepare and not much ingredients are required to make it. Let’s know the simple way to make potato-capsicum vegetable.

Ingredients for Potato-capsicum curry
Potato – 5-6
Capsicum – 2
Tomato – 2
Cumin – 1/2 tsp
Coriander Powder – 1 tsp
Red chili powder – 1/2 tsp
Turmeric – 1/2 tsp
Asafoetida – 1 pinch
Green coriander leaves – 3 tbsp
Ginger – 1 inch piece
Oil – 3 tbsp
Salt – as per taste

How to make Potato-capsicum curry
To make potato-capsicum curry, first wash and clean the potatoes and capsicum thoroughly. After wiping the potatoes with a dry cotton cloth, cut the potatoes long. If you want, you can also cut the potatoes by removing the peel. After this cut the capsicum also into pieces. Now finely chop green chili, green coriander leaves.

Now put oil in a pan and keep it to heat on medium flame. When the oil becomes hot, add cumin seeds and let it crackle. When cumin seeds start spluttering, add finely chopped ginger, asafoetida, green chili, turmeric and coriander powder and fry for a few seconds. After this, add chopped potatoes to the spices and mix them well with the spices and let them cook. Cover the pan and let the vegetables cook for 5-7 minutes.

When the potatoes become soft, add chopped capsicum to it and mix. If needed, sprinkle some water in the vegetable and once again cover the pan and let the vegetable cook. In between, keep stirring the vegetable with the help of a ladle. After cooking for some time, add red chili powder and salt according to taste and mix finely chopped green coriander on top.

Now put finely chopped tomatoes in the vegetable and cook for some more time so that the tomatoes can also soften well. After that turn off the gas. Your delicious potato-capsicum sabzi is ready. Serve it with roti, paratha or rice.
