Ingredients for making Fig Cashew Roll
Cashew powder – 1 bowl
Almond powder – 1 bowl
Fig paste – 1 bowl
Poppy seeds – 1/2 cup
Cashew nuts – 2 tbsp
Food color – as required
Milk Powder – 2 tbsp
Desi Ghee – as required
Sugar – 3/4 cup
How to make Fig Cashew Roll
Fig Cashew Roll can be a great sweet dish for guests on the occasion of Dhanteras. To make Anjeer Cashew Roll, first soak the figs in water for 2 hours. After this, prepare a paste of figs by grinding them in a mixer and keep it in an bowl. Now put sugar and half a cup of water in a vessel and keep it for heating. Boil the water till 1/2 string syrup is ready. After this, add almond and cashew powder to the syrup and make a thick paste.

When the paste is ready, add a spoonful of desi ghee and mix it and divide the mixture into two equal parts. Now add sweet yellow color and cashew pieces in the first part and mix it well with the paste and keep aside. After this, add sweet green color to the second part and mix it well with the paste and keep it aside for some time.
Now put 2 tsp of desi ghee in a pan and heat it on medium flame. After the ghee melts, add fig paste and fry it. Add 1 tsp sugar to it. After cooking for a few seconds, add milk powder, 2 tsp cashew and almond powder and sweet red color and mix it all well. When the fig mixture is cooked well, then turn off the gas.

After this, apply ghee on a butter paper and take the yellow mixture and roll it and keep it in a plate. Similarly, roll out the yellow and red mixture and make a roll by placing them one on top of the other. Then wrap the poppy seeds over the roll and keep it for 2-3 hours so that the rolls get solidified. After that cut the roll into pieces. Delicious fig roll is ready for the guests.
