This dish is not dependent on any green vegetable. It is made with the help of lentils and potatoes. You can make it with moong dal, urad dal or by mixing both. Ingredients needed to make vegetable

Potato – 3-4 medium size
Lentils – 1/3 cup
Tomato – 2
Green chili – 2-3
Ginger – 1 inch long piece
Oil – 2 tbsp
Asafoetida – 1-2 pinch
Cumin – 1/4 tsp
Turmeric powder – 1/4 tsp
Coriander powder – 1 tsp
Red chili powder – 1/4 tsp
salt – as per taste
Garam masala – 1/4 tsp
Chopped coriander – 1 tbsp

Potato Badi Recipe

To make Aloo Badi sabzi, first of all, grind tomatoes, green chillies and ginger with the help of a grinder. Now take a pan, add 1 tbsp oil and heat it. When the oil becomes hot, put the vadas in the pan and fry them. When the badis turn brown, take them out in a plate. When the badis cool down, break them all into 3 to 4 pieces.

After this, peel the potatoes, wash them well and cut them. Now put one tablespoon of oil in a pressure cooker and heat it. After this add asafoetida and cumin seeds to it. When both of these are roasted, then turmeric powder and coriander powder will also be added to it. Now we will fry this spice while stirring it. After this, we will put tomato paste in it. Fry this spice till the oil starts floating on it. Now add red chillies, roasted badi and potatoes to this spice and mix.

After that put a glass of water and salt in it and close the cooker. Will take it off when one whistle comes. When the pressure is completely released from the cooker, then open it. Now put garam masala and chopped coriander in it. Now the prepared vegetable can be served with roti, puri, paratha or rice.
