Dipped in the sweetness of sugar syrup, Malpua also mixes a different sweetness in relationships with loved ones.

Ingredients for making Kesar Malpua
Wheat flour – 1 cup
Semolina (rava) – 1/2 cup
Mawa (Khoya) – 3 tbsp
Milk – 1 cup
Cardamom powder – 1 tsp
Fennel powder – 1/2 tsp (optional)
Saffron threads – 1 pinch
Cashews chopped – 1 tbsp
Pistachio Clipping – 1 tbsp
Sugar – 1 cup
Desi Ghee – for frying

How to make Kesar Malpua
If you want to make Kesar Malpua for Diwali celebration, then first sieve the flour in a vessel. After this, add semolina to the flour and mix both well. After this add 2 teaspoons of sugar to it. After this, add cardamom powder and fennel powder (optional) to the flour and mix it. After this, take mawa and after crushing with hands, add it to the flour and mix it well.

Now add lukewarm milk little by little to this mixture and prepare its batter and beat it. Keep in mind that a smooth batter has to be prepared from all the mixture. Prepare the batter by adding milk accordingly. When the batter is made, cover it and keep it aside for about 1 hour. Due to this the batter will rise well and it will increase the taste of Malpua a lot.

Now take water in a vessel, add sugar to it and keep it to heat on medium flame. Boil this mixture until the sugar dissolves completely in the water. When the syrup comes to a boil, put saffron threads in it. Adding saffron will enhance the taste of the syrup as well as the color will also become very good.

After this, for frying Malpua, put desi ghee in a pan and heat it on medium flame. Meanwhile, prepare Malpua from the batter and after the ghee is heated, keep adding Malpua one by one. By pouring it with a ladle, the malpuas will become small and round. Fry them till golden brown from both the sides and then take them out and put them in the syrup vessel.
After frying the malpuas, put them all in the syrup and keep them immersed for at least 10-15 minutes. With this, Malpua will drink syrup well and they will become juicy. After this, take out the malpua in a serving plate and garnish it with cashew nuts and pistachios. Delicious Kesar Malpua is ready to serve. You can taste saffron malpua to the guest who comes home.
