Diwali 2022 Special Recipe: In the Diwali festival, along with the burst of firecrackers, it is a different fun to eat delicious sweets. To celebrate this special occasion, many types of sweets are made in homes. boondi burfi (Boondi Ki Barfi) is also one of them. You would often eat boondi laddus but this Diwali you can include boondi ki barfi in your sweets list instead of boondi laddus. Boondi ki Barfi, full of flavor, will be liked by all the people of the house. It is also easy to make this sweet with it.
Most of the ingredients for making Boondi ki Barfi are similar to that of Boondi ke Laddu. To make this, things like gram flour, milk, ghee, mawa etc. are required. If you have not yet enjoyed the sweets of Diwali, then with the help of our recipe, you can easily prepare Boondi Barfi.

Ingredients for making Boondi Barfi
Besan – 3 cups
Milk – 3 cups
Sugar – 2 cups
Saffron threads – 1 pinch
Mawa (Khoya) – 300 grams
Cashew – 7-8
Almonds – 7-8
Pistachios – 7-8
Silver work – 2 (optional)
Cardamom powder – 1 tsp
Desi Ghee – 2 tbsp

How to make Boondi Barfi
To make Boondi Barfi, first sieve the gram flour in a vessel. After this, add 2 spoons of ghee to the gram flour and mix it. After this prepare its batter by adding 2 cups of water. After whisking the batter well for about 5 minutes, keep it covered. Keep in mind that the batter should remain slightly thick. After this, put ghee/oil in a pan and heat it on medium flame. When the ghee melts, make a boondi with the help of a boondi maker and pour it into it.

Now fry the boondi till it turns golden brown. After this, spread the boondi in a plate or tray. Similarly prepare boondi from all the batter. After this, put milk in a vessel and cook it for about 10 minutes. After this, add saffron, sugar and cardamom powder to the milk and mix it. After cooking the milk for 4-5 minutes, add grated mawa to it.

When the milk-khoya mixes well, add boondi to it and cook till it becomes thick. Meanwhile, finely chop cashews, almonds and pistachios. After the mixture becomes thick, add chopped dry fruits and mix. Now grease the bottom of a plate or tray with ghee. Add the prepared mixture to it and spread it evenly all around.
When the mixture spreads well, leave it for 3-4 hours to set. After this cut the barfi into desired shape with the help of a knife. If you want to apply silver work on the barfi, then apply it before cutting the barfi. Boondi ki barfi is ready to serve to the guests.
