Diwali 2022 Special Recipe: Annakoot is organized on the fourth day of the five-day long Diwali festival. On this day, along with Goverdhan Puja, special Mix Veg vegetable is prepared in Annakoot. Mix veg curry looks very tasty and many types of vegetables are used to make it. In most households, after Devshayani Gyaras, some vegetables are stopped and they are started to be eaten again on Govardhan Puja. In such a situation, mix veg is prepared by mixing all these vegetables.

Ingredients for Mix Veg
Potatoes chopped – 1-2
Cauliflower chopped – 1/2 cup
Peas – 1/4 cup
Beans chopped – 1/4 gram
Carrot chopped – 2
Capsicum chopped – 1
Tomato chopped – 2-3
Onion chopped – 1
Paneer – 1 cup (optional)
Green chilies cut long – 4-5
Green coriander – 2-3 tbsp
Ginger grated – 1 inch piece
Eggplant – 1-2
Turmeric – 1/2 tsp
Cumin – 1/2 tsp
Coriander Powder – 1 tsp
Red chili powder – 1 tsp
Garam Masala – 1 tsp
Oil – 2-3 tbsp (as per requirement)
Salt – as per taste
Mix Veg Recipe
To make Mix Veg on the occasion of Annakoot, first cut small pieces of all vegetables including cauliflower, beans, brinjal, potato, tomato, onion. After this, put oil in a pan and heat it on medium heat. When the oil becomes hot, add cumin, onion and green chili and fry it. When the onion becomes soft, add all the chopped vegetables, mix well and let it cook. Now cover the vegetable and fry it for 5 minutes.
When the mixed veg becomes a little soft, add grated cheese to it and mix. After this, cover and cook the vegetable again for 5-7 minutes. During this, keep stirring the vegetable in between. When the vegetables become soft, add red chili powder, coriander powder, ginger and other spices and mix them all well with the help of a ladle. After frying the vegetable for 2-3 minutes, add little water and cover and let it cook.

When the vegetable is completely cooked, add garam masala and salt as per taste and mix it. After that turn off the gas. Flavorful mixed veg for Annakoot is ready. Garnish it with green coriander leaves before serving.
