Ingredients for Sev-Tomato Curry
Sev – 1 cup
Tomato – 2
Tomato puree – 1/2 bowl
Curd – 2 tsp
Ginger-garlic paste – 1 tsp
Turmeric – 1/2 tsp
Rai – 1/2 tsp
Whole cumin seeds – 1/2 tsp
Red chili powder – 2 tsp
Coriander powder – 1 tsp
Cumin powder – 1/2 tsp
Garam masala – 1/2 tsp
Kasuri fenugreek – 1 tsp
Asafoetida – 1 pinch
Green coriander chopped – 2 tbsp
Oil – 2 tbsp
salt – as per taste

How to make Sev-Tomato Curry
To make sev-tomato curry, first wash the tomatoes and wipe them with a cotton cloth. After this cut the tomato into fine pieces. Now take a mixing bowl and mix turmeric, cumin powder, coriander powder, red chili powder in it. Now prepare a paste by adding 2 teaspoons of water to the spices. After this, put oil in a pan and keep it on medium flame to heat.

After the oil is hot, add cumin and mustard seeds and fry for a few seconds. After this add a pinch of asafoetida and add the prepared spice paste and fry while stirring with a spoon. Add finely chopped tomatoes and cook for some time in the pan. Now put salt as per taste in the pan and cover and cook. After some time, when the tomatoes become soft, add tomato puree to it and mix. Now add curd to the gravy and let it cook for one to two minutes.

When the gravy starts leaving oil, add crushed fenugreek leaves to it. After this add garam masala and half a cup of water to the gravy. Now cook the gravy till the oil leaves again. After this add sev to the gravy and mix it. When the sev becomes soft, turn off the gas. Keep in mind that the sev should not be too soft. Flavorful sev tomato curry is ready. Serve it garnished with green coriander leaves.
