Ingredients for Rajasthani Kadhi
Curd – 1 cup
Besan – 1/4 cup
Rai – 1/2 tsp
Fenugreek seeds – 1/2 tsp
Asafoetida – 1 pinch
Dry red chili – 2
Turmeric – 1/4 tsp
Red chili powder – 1/2 tsp
Ginger paste – 1 tsp
Green chili – 1
Green coriander – 2-3 tbsp
Desi Ghee – as required
Salt – as per taste

How to make Rajasthani Kadhi
To make Rajasthani style kadhi, first put curd in a big vessel and add water according to the need and churn it well with the help of churner. When the curd starts looking like buttermilk, then add gram flour to it and mix it properly and beat it. So that there is no lump in the gram flour. After this, add red chili powder, turmeric and salt as per taste and mix it well. Keep this mixture aside.

Now put 2 tbsp ghee in a pan and heat it on medium flame. When the ghee melts after heating, add mustard seeds, fenugreek seeds, dry red chilies and a pinch of asafoetida, mix with a spoon and fry. After frying for about 10-15 seconds, add finely chopped green chilies and ginger paste and mix. After this, fry the spices for about 1 minute more.

After roasting the spices, add the mixture prepared from curd-gram flour and let it cook for at least 10 to 15 minutes while stirring it with the help of a ladle. When the curry starts boiling well and is cooked, then turn off the gas. After this garnish the curry with finely chopped green coriander leaves and serve it with roti or rice. If you like pakoras, then you can take them out separately and mix them in the curry. This further enhances the taste of the curry.
