How to make Lauki Makhana Kheer?

  • To make this kheer prepared from bottle gourd and makhana, take a medium sized raw bottle gourd.

  • Wash the bottle gourd clean and grate it well with the fine side.

  • Put 2 spoons of ghee in a pan and first add makhana in it and fry it lightly.

  • Put bottle gourd in the same pan and cover and cook it like a light fry in ghee.

  • Keep stirring the gourd till it melts and keep the gas flame medium during this time.

  • When the gourd melts a little, check it and add milk to it.

  • Cook bottle gourd kheer by adding milk according to how thick you want it to be.

  • Let the kheer cook and keep stirring in between. At the same time, cut some cashews, almonds and if you want some chironji into pieces and mix them.

  • Peel 2-3 green cardamoms and grind them finely. If you want, you can also grind cardamom with sugar.

  • Bottle gourd kheer tastes a little thick. Therefore, when you feel that the gourd is cooked and the kheer has become thick, then add sugar to it.

  • You can increase or decrease the sweetness as per your choice and also keep the kheer thick and thin as per your choice.
