How to make Mishti Doi at home in Hindi

  • Take 1 liter full fat milk in a heavy kadhai or pan. Keep the flame low or medium-low and start heating the milk.
  • When the milk is heating, keep stirring it occasionally.
  • Then continue boiling the milk on low to medium flame. When the milk starts boiling, keep stirring it occasionally.
  • Continuous boiling will reduce the milk.
  • Stir frequently. Also scrape off the dried milk solids from the sides and add to the boiling milk.
  • Boil the milk until it reduces to â…“ or ½ of its original quantity.
  • Keep the pan down and let the milk cool for about 8 to 9 minutes. Scrape the dried milk solids from the sides and add to the milk.
  • Meanwhile, finely chop or grate 175 to 180 grams of palm jaggery.
  • After 8 or 9 minutes, add chopped jaggery to the milk. While adding jaggery the temperature of milk can be 60 to 65 degree Celsius.
  • Mix well until all the jaggery dissolves.
  • Add ½ tsp cardamom powder.
  • Mix well and let the milk heat.
  • If the temperature of milk decreases after adding jaggery, you can check the temperature after adding milk.
  • Now check the milk. If your finger feels comfortably warm and your hand does not burn, then add 2 tablespoons of curd to it.
  • Now mix them well. Curd should dissolve in milk. If you want, you can also beat the curd before adding it.
  • Now pour the curd mixture into an earthen or terracotta bowl or earthen pot.
  • Cover with a lid or seal with aluminum foil.
