- Bitter gourd – 7-8
- Onion – 1
- Cumin – 1 tsp
- Coriander powder – 1 tsp
- Turmeric – 1 pinch
- 50 grams shengdana
- 2 red chillies
- 2 spoons gram dal
- 2 spoons black urad dal
- Asafoetida – 1 pinch
- Green chilli – 1-2
- Green Coriander – 2 tbsp
- Mustard oil – 3 tbsp
- Garam masala – 1/4 tsp
- Dry mango powder – 1/2 tsp
- Salt – as per taste
- Tamarind water – half cup
How to make bitter gourd curry
To make bitter gourd curry, first cut it into round shapes and take out the seeds and throw them away. Now add 1 teaspoon salt to the bitter gourd and keep the bitter gourd covered for half an hour. Now we will prepare the masala to make spicy bitter gourd vegetable. First of all, fry 50 grams of Shengdana on a hot pan. When Shengdana is roasted, remove it from the pan. Now after that, take 2 red chillies, 2 spoons of gram dal, 2 spoons of black urad dal, half spoon of fenugreek, cumin – 1 tsp, coriander powder – 1 tsp and put them in hot curry and roast them well. Now after this, put these spices in a grinder jar and grind them very finely. Now after half an hour, squeeze out the water from the bitter gourd and keep it aside in another vessel. When the bitter gourd is roasted, take it out, then add 2 spoons of oil and temper it with a little mustard, cumin, gram dal, black urad dal, lala mirvah and asafoetida. Now add chopped onion to it and when it turns light brown, mix roasted bitter gourd in it. When onion and bitter gourd are mixed then we will add the masala which we had prepared by grinding. After some time, we will add tamarind water, turmeric, ginger and garlic paste to it. We will keep stirring the vegetable for 2 minutes. Now add salt as per taste and add 2 glasses of water and let the vegetable cook. After 5 minutes your bitter gourd curry will be ready. You can eat it with rice and roti.
